If you're a hipster traditionalist looking for big lots (and checking the soles and maggots daily), this is for you.

I'm new to fermentation and have bought several different machines (gadgets?) to make mainly sauerkraut and kimchi. I bought this in combination with another Ohio stoneware product, a 2 gallon clasp and weights. I didn't think about it until it was too late, but it leaves a small gap between the jar and the lid (as a natural result of clay/kiln production) for fruit flies to squeeze through to get at your precious cabbage. and lay eggs. I could make good kale with it, but I would recommend an airlock system as I prefer pit-free fermentation (yes, they came and I got scared). I suppose you could alleviate the problem with gauze (and a big rubber band if you're really paranoid), but why bother when you could just as easily use a good gating system in small batches that are easier to manage /to be transferred to the fridge When is it ready? If you're a hipster traditionalist looking for big batches (and willing to check them daily for brine and maggots), this is for you. Otherwise do a little fermentation research in the wide-necked jug.
