When folded, the surface can be made completely flat, so you can't cut yourself! It's so cool! Of course it costs twice as much, but it's worth it. It's all stainless steel and won't stain, which happens almost instantly with plastic mandoline slicers. If you want to prepare Julian fries, they have a separate model for that. Of course this is an INVESTMENT, but with high quality you will not regret!
