Review on 🔪 Tojiro DP Santoku Knife 6.7" (17cm) by Mary Gilbert

I bought this knife for a colleague. I have three Tojiro DP knives (150 small, 210 small, 240 gyuto). I HATE that these knives are sharpened on the template because the heels ALWAYS have a little curl at the end because the template can't sharpen the entire edge. So expect to learn how to sharpen and hone a blade (or just use a dull, unevenly sharpened/sharpened knife). Take a rough DMT and a combined King Stone and shape the desired edge. However, the reason it lost a star from me isn't because of the region. ALL Tojiro DP knives have this problem. The problem I have with the Santoku is its length and geometry. I understand that length is a given and that geometry is a personal preference. However, the Santocus should have an overall flat profile on at least SOME of the edges. However, this knife is too short to have a flat spot that slopes gently as a santoku should have, and has a continuous curve that renders the santoku useless for slicing and only good for swinging. As I said, the numbers and pictures are visible to you, but it's difficult to get an idea of the blade length from just that. Having held and used it I have to say I wish it was about an inch longer. However, due to the quality of the Tojiro DP line, I can't give this knife less than four stars with a clear conscience.
