These are high quality mats. * Very good price for the quantity you get. * Very easy to clean. They're more for light slicing/chopping - a sharp knife and some pressure can easily create permanent scratches that can turn into cuts anywhere. On the other hand, you can cut them with scissors if you need to reshape them. I used a utility knife and cut a 1 inch strip in (about half the thickness down) and then folded the strip down. to create a lip that now sits nicely over the edge of my kitchen island.
