Cast iron has always scared me. It has a reputation for being a high-maintenance device and the parts I've used before never stand up to use. Obviously, the trick is to buy good stuff and follow a few simple care instructions. Advantages: - Very durable. There's a reason sets that are over a century old are still in use today. Surprisingly, in many situations, they don't stick. I was able to cook medium sized eggs in a skillet - Holds heat very well. Cons: - Requires some caution that you may be used to, but it's easy to learn. You need to take extra care to clean and dry things shortly after use to remove any residual water before rust stains form.
