I have been working in professional kitchens for many years. When it comes to cooking, the right tool can usually turn an hour-long task into a minute-long one. Here's a good example: I cooked 4 pounds of pickled jalapenos (about 50 peppers). When slicing thin with a knife, I can work about 15 seconds per pepper (assuming that's the only job I have to worry about). For 50 peppers I need about 12.5 minutes. With the chopping attachment on this food processor and after removing all of my peppers, I can literally chop a pepper in a second. It went from a 12 minute job to a one minute job and my pieces are more consistent in size. This extends to just about any other food that will fit in its chute (tomatoes, cucumbers, carrots, onions, cabbage, strawberries, potatoes, celery, you get the idea). expensive. Yes, these models are more powerful than those of the cuisinart and are designed in such a way that repairs are possible when you would otherwise have to buy a new machine. We have used/abused this exact model in my restaurant every day for the last two years and counting. The serrated blades stayed sharp (note: NEVER throw ice on this machine, it will ruin the blades. If you want a smoothie, buy a blender) and the motor never missed a beat. Of course, cuisinart can puree and emulsify with the best products. The 14-cup capacity is about as much as you can get before needing a much more expensive machine, and it suits our needs as it cooks for hundreds of people daily. . My only complaint on this and the reason for only 4 stars is that the bowl is not of the same quality as the rest of the machine. For home users I don't see this as a big problem. There are two problems in a professional kitchen environment: 1. Plastic is prone to cracking, particularly due to the high temperatures of industrial dishwashers and physical stress (kitchen workers tend to be aggressive with their tools). 2. The fuse is difficult to fully clean when food gets inside. Again, this isn't a big deal for the home user, but health inspectors would rather see an NSF certification. Overall I like this processor. Additional bowls, blades and attachments can be easily purchased/swapped. The engine is a reliable workhorse. Compared to industrial models that cost 5 times as much, this guy is a champ. I firmly intend to buy another one if mine ever dies. Keep up the good work Cuisinart!
