
I have stainless steel pans that I know will last for decades at least. However, I usually replace non-stick items after a few years as I like to use metal utensils and they tend to scratch the surface of my non-stick cookware. On this pan, after a month of use, the mixed copper-ceramic coating holds up to my abuse. It's definitely safer with a non-stick coating that doesn't have PTFE or PFOA. However, I know I can't expect the same nonstick performance that you can get from a PTFE or PFOA coating. It's just a fact. Different materials produce different culinary effects. I will choose PTFE and PFOA coating safety. I compensate the texture with oil. With no oil, it's definitely nonstick, but you can't expect a similar texture from a traditional nonstick pan.
