This tool with sharp teeth is essential for grating hard cheese, chocolate, shallot, garlic, ginger, onion, radish, horseradish, lime, lemon and orange. I haven't noticed any dulling and I use it for nutmeg which can dull the blade. You may need a separate grater if you grate a lot of whole spices. If you've used the 40020 Microplane Black Plastic Handle Zester Grater, this handleless version may take some getting used to. Model 40020 has rounded edges and I have found that some products tend to stack on the bottom edges which is why I recently purchased this model. The edges are square and will not catch food. Important Note: The Microplane grinds hard cheeses into very light, fluffy pieces that weigh less by volume than cheeses that are box or rotary grated. One ounce of finely grated Parmesan makes ½ cup of grated cheese; one ounce grated on a microplate yields ¾ cup grated cheese. Therefore, when following the recipe, use the recommended weight of hard cheese. If it's a volume amount, double it with a microplan.
