Want to sharpen your super steel knives quickly? Buy this.

Have you ever spent half an hour sharpening a knife made of hard steel like s30v and barely removed anything? If so, you know this can be a real headache**. Metallurgists have been doing crazy stuff with powdered metal alloys for the last 10 years since I started sharpening my own knives. While the old grinding technology still works, it's painfully slow for these new super-hard steels. It needs something more aggressive. DMT inserts offer extremely fast and precise stock removal. As they are so expensive I was concerned about the quality based on some reviews but mine looks great. There is a short break, but not a long one. I was able to re-profile the edge of my 535 (s30v) benchmark in about 10-15 minutes with the very rough side. I didn't find it too rough like some reviews and the panels are very flat. I think some reviewers are confusing the extremely aggressive removal rate with coarser grit. I examined it under magnification and the diamonds were the same size and about 220 mesh by DMT. It's very fast even with the s30v, to the point where every hit counts. Instead of mindlessly making multiple passes and then looking, I focused on specific areas of the blade and looked at them after each pass. It lets you cut so much with each stroke it's almost like a power tool. DMT states that extra coarse grinding is a "safe alternative to mechanical grinding". This is absolutely true, with the added benefit of the blade being less likely to heat up. With this system, it would be very easy to destroy knives if misused, but that goes for any powerful and useful tool.
