I've been looking for a bread machine that bakes fantastic GF bread for a long time and I was lucky enough to buy this totally lightweight machine for a promotion. I didn't need an electrical engineering degree or a lot of time to bake GF's edible bread. Add wet ingredients, add Bob's Red Mill GF Wonderful Bread Mix, make a small indentation at the top to add the yeast provided by Bob, select the GF setting, then select dark, medium, or light bread, close the lid and press start. After about 2.5 hours I can turn the tin over and the fresh, warm bread slides onto my grid without a problem as soon as the "ready” beep sounds. That's all! If you don't already have a bread knife, buy one or even two. They're cheap and you let the knife cut through the bread instead of making a mess with another knife. Personally, I use whole milk, 3 eggs, and 1-2 teaspoons of sugar because that's the beauty of this machine. You can customize things to your liking. If you're dairy-intolerant, you can easily substitute ingredients and tweak recipes to your liking. If you want raisins or nuts, the machine will tell you when to add them and close the lid until done. I've been using this machine for five months and have deliberately waited to write a meaningful review so you know this Zo has been reliable and has never given me bad bread. The GF button alone is worth the cost of the Zo to me because GF isn't a choice, it's the difference between feeling "fire pit" for days or weeks and enjoying a good quality of life. My wonderful, helpful husband can eat almost anything, but he needs to watch his sodium intake. He loves this GF bread and says he doesn't feel any difference in taste other than being able to eat freshly baked bread anytime. Oooh! I did NOT receive this product for free to leave a positive review. I only buy expensive things while on vacation to get great deals. By the way, this machine bakes any type of bread, not just GF.
