I cooked tons of meat while on my keto diet β€” so I became a bit of an expert at cooking greasy foods (and there are spots in my kitchen to prove it). I bought several that were so flimsy and flimsy that they broke in a short time. 2) While charcoal filters seem like a good idea on some screens, I've found that they fill up with grease and end up dripping, smoking and not really eliminating odors, which is a great deal. The clear gorilla strainer is durable, easy to clean and won't collect greasy mucus. 3) Purchase a colander that matches the size of the bowl as closely as possible. There were several large screens on smaller pans and it was found that the heat rising up and around the pan (below) overheated the exposed screen and darkened it, covering it with carbon and leaving a large ring on the screen. Yes, you may need to buy multiple screens if you're a cheapskate. 4) Beware that if you put the plastic too close to the rim of the pan, heat will build up around the pan which will melt the plastic handle.
