I love Anova Sous Vide and use it regularly. I use an Anova brand vacuum sealer and Anova brand bags to keep everything "in the family" and make sure everything is ok. For the most part everything works fine. However, these rolls have one major disadvantage that drives me crazy: sometimes parts of the roll wrinkle a bit depending on how it was rolled during production. If the bag isn't perfectly flat due to a small crease in the bag when you put it in sealant to vacuum, you'll end up with a bag that won't seal properly and won't hold the vacuum. The problem is that you don't always notice it right away. But after a few minutes you will see that the bag is no longer holding a vacuum and on closer inspection you will notice a crease that caused the seal to fail. I've lost tons of bags (and sometimes groceries) as a result. It's annoying. The only thing I've found that helps smooth out the pouch if it has any creases is to heat it up a bit to make it more pliable before sealing. I just hold it briefly over the burner and then fill a custom sized bag and stick it in the vacuum. It's annoying. Not the end of the world, but annoying. A really privileged first world problem, but it's aggravated enough that I deducted the stars, and no doubt you, as a member of this first world populace, are upset too when that happens. Otherwise the convenience of being able to make bags of any size and store rolls in the machine is great. And once sealed, it feels comfortable in a sous vide bath for hours without losing its vacuum seal or falling apart. Without this durability I would have switched to a different brand long ago.
