With some modifications (blade storage box, cut-resistant gloves), it can help! Carrot stains are not disturbed.

I bought this mandolin because I love the OXO Good Grips Tabletop Spiralizer with 3 Blades and StrongHold Suckers. Comparing the instruments, I see that the OXO's design has changed since this mandolin was introduced in 2008 (search "Chowound oxo mandolin video"). I understand OXO has released a few new mandolins since then, but I wanted one with a V-blade, julienne shears, serrated cut, and a springless food pusher, so I bought this old one. I like that the Spiralizer has a separate drawer with drainage holes on the bottom to store the blades; less chance of cutting me while the blades dry in my dryer box and they stay clean and safe when not in use. Other reviewers have complained about the mandolin juice getting on the blades stored on board under this mandolin. To make storage and cleaning easier, I made myself a blade box (see attached photos). Like other reviewers, I found carrots make runways dirty; after grating just two carrots and right after washing with Dr. Bronner's Pure-Castile Liquid Soap (8 oz, mint) left a permanent orange stain. This surprised me since the soap from Dr. Bronner usually removed almost everything and I immediately washed the mandolin. I don't really care about looks as it doesn't detract from function, but if it did matter to me I could imagine getting frustrated. So far I have cut oranges (thick) and onions (thin). The food pusher worked well. The blade cut well. I have successfully sliced an onion using the "rotate 90 degrees on each cut" method using a large (orange) julienne bit combined with a blue (3mm) setting on the V-blade. I sliced the mushrooms (it's best to cut stem down towards the blade so they can be sliced beforehand). I sliced the ginger and garlic fairly cleanly on the 1.5mm setting. The food pusher has some trouble grabbing individual garlic cloves when they are mostly chopped and there are only a few left. I've tried chopping garlic into sticks with inconsistent results. I've tried slicing garlic cloves into waffles with inconsistent results. I haven't tried slicing waffles yet; I'm waiting for the mail gauntlet to arrive so I can try it on carrots (wish I could make waffle carrot "chips" for sauces instead of buying nasty pre-cut ones from the store). A few words about cut resistant gloves: I bought a pair of cut resistant gloves, NoCry Cut Resistant Gloves - High Performance Level 5 Protection, Food Grade. Small size, free e-book included! so I can cut what doesn't fit in the food pusher. Unfortunately the tip of the glove got stuck in the blade when I cut the first onion, so I ended up sending it back and buying a chain mail glove instead.
