For the working chef, most stainless steels won't hold a blade and are also high carbon steels unless you're spending a lot of coins on a Wustoff or Hinkel. Wooden handles and plastic handles must be washed regularly! Don't think that just because it has a plastic handle it won't hold germs, and if a wooden handle is cleaned and oiled it can be kept clean and last a very long time. I recommend them all the time
