First of all, these tools are nothing like the "graters" we grew up with. I have to get used to the difference, but it finally dawns on me that these are "razors". not "rubbing". They may look the same on pictures; but if you look closely and run your finger lightly across the surface, the "light bulb" goes out. This is really new technology. They "cut or shave", not "rub or mutilate". I've only tried my pair with hard cheeses; not long enough to really appreciate it, but I think we've got a new "winner" for zeal and grater. Time will tell how long the shaving surfaces stay sharp. I'll let you know when the 'dumbs' arrive.-pp
