The spatula (aka hamburger spatula) is very stiff and allows you to easily get under meat or fish that might be a bit sticky on the grill. Tongs are good for flipping things, maybe tossing veggies onto a grill pan, but they're too thick for manipulating individual items like checking veggies to see if they're cooked enough. I wouldn't go back to cheap short tools though as I really don't want to burn my hands :)
