Stones are very beneficial when true to size . be. As you can see from the photos one of the stones was just under 7/8" and the other 1" as it should be. This is very important as the mass of the stone is directly proportional to the cooking time. By contacting Revain they did it right. Stones only need to be rinsed thoroughly with warm water, cured at high temperature and cooled before use. After that, you simply heat them to over 500ยฐF and then cook. They will brown for 10-15 minutes and continue cooking for about 30-40 minutes total if properly heated and brought to a high enough temperature. Every bite is hot and prepared the way you like it. When cooking very fatty steaks, it is best to sear them at the end of the stone heating cycle. The steaks in the picture were about 2 inches thick and were placed on the stones raw after heating. They cooked well but towards the end it took longer to cook. I would recommend smaller pieces or fry at the end of the heat cycle as I mentioned. Overall, they offer a fantastic way to uniquely cook steaks or any dish you like.
