I use scoops to scoop cookie dough. Shovels allow you to get cookies of the same size. Three sizes are good for making different sizes. I like that the shovel can easily be used from either side. I'm left-handed and had problems with my old shovel. Before working with cookie dough, I put a spoonful of butter on the spoon, peel it, and after a dozen I oil it again - the dough comes out very easily.
