amazing! I've wanted to try my hand at making mooncakes for months, if not years. After watching many videos online and looking at dozens of recipes, I finally decided to buy these mooncake molds. I figured it would be easier to just pop them out of these spring-loaded shapes than to try and bang a traditional wooden shape against the edge of a counter. I also liked the variety of sizes, shapes and designs - square, round, large, small, a total of 12 plates. I wasn't disappointed when the molds arrived! They were securely wrapped in thick plastic and bubble wrap in a large box, and each set was sealed in a separate plastic bag to avoid confusion. They are made of durable plastic with a quality metal spring construction. I can't believe the high quality at such an affordable price! They were very easy to use - just insert the disc you want, rotate and you're done! Cleaning is just as easy and painless. I was dying to make snowskin mooncakes (a mochi-like outer shell that doesn't need to be cooked) with a lotus seed filling that I bought ready-made in Chinatown. I tried making my own filling but it was a disaster. If you're trying to get creative, just make sure the filling itself is firm enough to hold its shape or it won't work. It's very important to weigh both the rind and the filling so that each mooncake is exactly the same size and proportions. Although most recipes recommend 70% fill and 30% skin, I've found that a 50/50 ratio works for me. The large mold is labeled 100 grams, so I weighed out 50 grams of filling and 50 grams of skin. However, it is not possible to determine exactly how much the ingredients weigh to precisely fill the volume of the mold. No problem! Simply press the finished and floured, skin-covered filling ball into the mold so that the bottom is flat and the side patterns are filled. The form does not need to be filled to the brim (or to the brim). Press lightly against a clean surface, lift the mold and gently squeeze out the finished moon cake. HOW MAGICAL, your boring food orb has been transformed into a beautiful and awe-inspiring piece of culinary art! You will never cease to be amazed. I'm so glad I bought these fun shapes and I can think of a million other creative things I could do with them.
