I think what they say about knives is true. If you have a good quality chef's knife, you really don't need more. I've bought several sets over the years and I can count on two hands how many times I've used my chef's knife because I find it awkward to use, too big, and the blades aren't designed for it. I completely changed my mind about buying this knife. My first sign of quality was when it arrived in a fully padded box with blade guards on the tip and back of the blade. Upon inspection I could tell I had bought a quality knife as it felt very different in my hand and felt like a balanced weight. The blade is made of high carbon stainless steel with a polished wooden handle that is easy and comfortable to hold. I could chop vegetables very finely and could even cut matchsticks which I was never able to achieve due to the lack of good sharpness and blade control. It's now my knife for almost everything I cook in the kitchen and I'm so glad I made this purchase.
