I have bought this little gem several times and looked through it several times. I discovered the beauty of roasted garlic about 8 years ago from my vegan/lactose intolerant/organic/non-GMO/gluten-free friend. Since then I have become a resident of black Gordinia Ramsey. I roast garlic in this little one twice a week. I've found that the perfect consistency is achieved if you fry it face down in oil and spices for 15 minutes (lehr set to 375), turn it upside down, brush with another batch of oil and cook for another 25 minutes roast meat. It comes out like butter and tastes so good that you cut down on sodium-rich foods (salt, Mrs. Dash, etc.). Larger heads of garlic require more time to set, but tend to last the longest. And when I'm done with the garlic, I take some more oil, pour it into the ground (which still has some flavor and spice in it if the garlic was face down) and put it in a separate jar. Voila - fortified olive oil. As a gift, I usually give a jar of infused oil with the same directions as garlic. It also makes a great housewarming gift. YOU'RE WELCOME
