This is an angle scoop. That is hard. It's well built. I've never seen a handle shut down. But time will tell. This is small compared to what you will find in a restaurant. But if you don't have this tool, you will find it very difficult to empty the wok. It has an edge that runs down the sides so you can carefully scoop lots of rice out of the wok. I use a cast iron wok, which is too cumbersome to lift with one hand and pull out its contents. This tool makes it very easy. I don't fry with it because the sound of metal on metal annoys me. However, my wooden spatulas are too flat to scoop out the contents of the wok. I don't see any risk of scratching the wok using it as a food remover, although I might feel differently if I used two of these for frying. However I think if you are careful this is not a problem as the angle suits a wok well.
