A few tips from the chef

First of all, Norpro is 100% compatible with Bron, including replacement Bron blades (available in different sizes but not yet on Amazon). Safety: First, if you haven't spent at least a hundred hours on the mandolin, be sure to use a guard. No, not this useless/dangerous trigger. Use a butcher's glove (or "oyster glove"), preferably chain mail. They could do with much cheaper Kevlar or "fibers woven with stainless steel threads," but are more prone to bruises and scratches. Second, pay attention to the blade, not the veggies. Third, use smooth, quick movements and apply as much pressure to the surface of the mandolin as to the movement itself. Last and most important: take your time! Take your time, focus, get rid of that burning smell coming out of the oven. The mandolin forms narrow, flat ornamental whorls. While waffle cut veggies are perfectly possible with this sturdy industry standard, a lot of fine tuning is required and they come out thin with no clearly defined holes. For better cutting of waffles, consider a standalone waffle cutter. Washboards aren't generally adjustable, so I'd recommend a hand-turned blade (look for deeper/wider combs). To get even slices, you can either set the julienne blades to a neutral position or remove the julienne blades entirely. The first method often results in nicked discs, causing the discs to snag on the dangling stalks. The second method is time consuming and may eventually result in the nuts loosening (so be careful not to over-tighten). It saves time and is an indispensable tool once you get used to it. This could use more documentation.
