Making Ravioli for the First Time

I bought this because I've always wanted to make pasta and after mastering the Kitchenaide pasta maker this seemed like the next logical step for me. I bought the 1.5 inch round because I like the shape and a lot of reviewers have complained that the 1 inch size is too small. The ravioli maker itself is very durable and I believe it will last a long time. I washed and dried it before first use by coating it with a thin layer of olive oil and a thick layer of flour. I rolled out the dough and placed it on the kettle. Then I add little bits of filling. After seeing many reviews about the 1 inch mold being too small I thought it might be possible to add a decent amount of fill to this 1.5 inch mold, but I was wrong. Each ravioli contains very little filling. Well, to be fair, that's a good amount when you eat them, but when you cook them, it's hard not to overdo it. And when the ravioli are full, it gets very messy. After struggling with the first 4 batches I finally found the tiny coffee spoon my wife carries and it was the perfect way to measure the filling. Not sure how much it holds, but probably just under half a teaspoon. Once I figured out how to measure the topping, things got a lot better. I will say that after assembling the ravioli it takes some force to get the rolling pin to cut them all out. You have to press the stylus while moving back and forth through the form. I thought it would be fun to make ravioli with my boys (4 and 7 years old) but unfortunately they couldn't attend. You have to be careful to fill them in correctly and they couldn't help but cut them out. Overall I am very happy with the ravioli maker and look forward to making more. By the way, in case you're wondering how thick to make pasta sheets, I rolled them out to the number "7" on my pasta cooker. Mercato has a YouTube video about making ravioli and they are "6" thick. I tried it for the first time and it seemed too thoughtful to me. But you will understand what you like. 😉
