Due to some negative reviews I hesitated to buy this product. But after several baking blogs mentioned it being one of the top ten recommended baking thermometers, I took a chance. First of all I would like to say that before using any product, especially this one, you should read the instructions on the back. Because many of the complaints I've read in the negative reviews could have been resolved simply by reading the instructions at the end before using. Second, the liquid inside can sometimes separate, but like old mercury thermometers, all you have to do is shake it and it will snap back into place. That doesn't mean it's broken. Third, to get an accurate reading, don't let the thermometer sink to the bottom of the pan or you'll get an inaccurate reading (the temperature will be higher than the rest of the pan). You can adjust the clip on the back to adjust the depth of the pot thermometer. Overall this is a good product and serves its purpose. I bought this to make Italian meringue buttercream. I got to the softball stage with this thermometer and it was an accurate reading because I did a softball test to make sure. My buttercream turned out perfect. So in closing I say give this product a shot and please read the instructions.
