Dough should be well chilled - partially frozen. Pass the knife over the dough only once! As you roll out the dough, you need to press hard so it cuts through. Place the dough on a thick towel or canvas mat. Be sure to dip the cutting head in flour. After cutting and before attempting to open the rack, refrigerate the dough.
