Not great for induction cooking

These seem like they would be excellent for radiant electric or gas cooktops, but unfortunately they do not work well for induction cooking. Without getting into the mechanics of induction cooking, essentially these pans are 'induction capable' because they have a ferrous plate attached to the bottom. The plate heats up and then transfers the heat to the rest of the pan. It does not have ferrous material throughout the core of the pan which is necessary to get the full capabilities of induction cooking. As a result, these pans take a long time to heat up and you don't have the control that you would with stainless pots and pans.After much research looking for pots and pans that have a ferrous core and non-stick, I decided to try Hexclad. You can find them on the Ebay Store https://amzn.to/3iOSgU4. No doubt, these pans are pricey, and they don't sear quite as well as stainless, but they do sear, they are crazy non-stick, and they work really well on induction cooktops. If you cook on radiant electric or gas, these Ninja pans are great, and a whole lot less expensive. but if you are looking for pots and pans for induction cooking, you'll be disappointed.
