This knife is very sharp and peels very finely. I've used it on peaches, kiwis, ginger and potatoes so far and was amazed at how thin the skin is. It is made of stainless steel and can therefore be washed in the dishwasher. Careful, this thing is sharp! I've cut myself with it when I got too close to a kiwi that was peeling. My fault, 'cause it's good to be blunt unless you're a chub like me.
