Works perfectly in kitchen and dining room

I've been making pasta from scratch for over 50 years - I've used the Imperia 150 for 35 years and love it. It's quick and easy, and to be honest it's the thinner paste that most people prefer, especially when it comes to angled hair paste. COFUN rollers do not produce such thin layers of paste. However, the three attachments in the COFUN set work flawlessly and are actually faster than the gold standard of manual table pasta. OK, PLEASE NOTE: This product works perfectly if you prepare the dough on the dry side. If not, chances are you'll end up with a mess, some serious reel and knife test mayhem. This is how you can tell if your dough is dry enough. Sprinkle the piece of dough on both sides and flatten with your palms or roll out into a rectangle. Dust both sides again and rotate the rollers to their widest position and load the dough. Now feel the dough. If it appears moist, your dough is too moist, so sprinkle the entire sheet on both sides, fold lengthwise, sprinkle again, and then run it through the rollers again. If it still appears wet, repeat this process. If not, adjust the rollers a few notches, lightly brush both sides and skip the sheet, adjust the roller a few notches less and repeat the process. Continue until you reach the desired thickness and feed it through the cutter. Your pasta will be perfect. Just remember to lightly powder the noodles and roll them a few times until they get too wet. Next time, do the dough dryer first. Remember, dusting means just that. I pour a small amount onto the leaf and spread it over the entire area with my hand. This way the dust sticks to the sheet of dough and you don't stick the knives together. Believe it or not, I make dough in a large Cuisnart food processor. I adjust the batter by adding a teaspoon of water or adding a BIT flour until the batter is the consistency of beach sand. Large lumps mean the batter is too wet, so add 1 tbsp of flour until you get the right consistency. Your pasta will be perfect.
