Here's how I do:* Tofu is best drained by freezing it first, then thawing it on paper towels to soak. up the water. You don't have to freeze it. It just helps.* Whether you freeze it or not, take a plate or cutting board and line it with kitchen paper.* Place the tofu on the kitchen towels and place another layer on top of the tofu.* Lay another plate or, preferably, a cutting board over kitchen paper and then press it down with heavy books or cans. * Drain the water squeezed out of the tofu about every half hour. * Repeat until there is no more water. to drain.* If you don't want to use paper towels, you can just use a bowl, but drain the squeezed water more often.
