
Stainless steel easily cleans in the dishwasher without staining/oxidation. Chicken in dry brine browns beautifully in just a 180ยฐ turn. In my oven, when cooking, fold a 5" strip of foil on the bottom rack to protect the neck/top of the breast from over-browning about 5" x 5". Instead of turning the chicken a few times in a shallow pan, I only have to turn it once. Best of all, the juice that drips into the cup/collector is KILLER! Mixed with some crรจme fraรฎche and drizzled with carved chicken, it's amazing!
