Good quality butcher paper.
This peach colored paper does the job well. It absorbs oil from my attempts to smoke cheese. Also, it seems to absorb some moisture, which does a good job of preventing mold before vacuum sealing the cheese. It's easy to cut out of the tube and makes a useful work surface too. Please note that this paper is not waxed.
