I constantly check the pH of my drink. I no longer determine when to bottle for second fermentation by counting days and sweet and sour taste. I use my PH strips and make sure I'm sure what's between 2.5 and 3.5 before bottling. I have friends who stopped brewing because they were frustrated with their inconsistent brew, but when I asked them if they would check their PH, they said no. I like to keep my beer healthy, even for my scobie. I've used other brands, but I liked these for their easy readability and smaller increments for more accuracy.
