I have worked in many kitchens over the years. I take my knives seriously because they are the #1 tool in the kitchen. These Clauss knives are the best I have ever seen or used. I did some research and they are indeed NSF listed. There's no point in spending $300 on just one knife. It's impractical to spend a lot of money on knives for busy, high-performance kitchens. These are high quality professional knives suitable for any kitchen at an affordable price. These will probably be the last knives I will ever buy if I take good care of them. As with any knife, you must take care of them and use them responsibly. For example a quick rinse after you cut lemons as the acid will ruin the edge. If there was ever a problem I would buy again with a clear conscience. Highly recommended, you won't be disappointed.
