I bought these cutting mats because the cut food is easy to transfer into a bowl or pan and because they are light. I gave three stars because I was disappointed that after cutting the food once or twice with a sharp knife, the mats were left with cuts and dents from the knives. The ease of cleaning of the mat is reduced if there are small protrusions on the mat that food particles can get caught on. I take care to clean and wipe with bleach, especially when I'm cutting meat, fish, or chicken. These are very good mats, but be careful to use dull knives and don't do any heavy cutting work! Good carpets.
