My wife and I use jars for a variety of things so I wanted to try making sauerkraut in 1 liter and 2 liter jars rather than buying a large expensive pot. I'm going to buy a pot now because those stupid things just don't work and I'm tired of having to reopen and repackage jars twice a day once they start bubbling. Glass weights aren't heavy enough (the herb just pushes them to the lid or bypasses it); they slip into the cabbage even when it is tightly filled with cabbage and not juice, forcing me to take them out and risking infecting the cabbage; and they are NOT easy to grab, especially when wet. I made 3 gallons of dynamite cabbage in 6 2 quart jars and formed 5 of the 6 before catching it because I had to open the jars to grab the cabbage and move the weight of the hog jar.
