Review on πŸ”ͺ Kyocera Advanced Ceramic Revolution Series 6-inch Santoku Knife - Black Handle, White Blade by Sean Huff

Revainrating 2 out of 5

Fragile and difficult to sharpen

I have had this knife and the smaller version for 10 years and have taken care to avoid chipping the blade. I also bought a battery operated Kyocera sharpener which I tried to use to sharpen this knife - it comes out a little sharp but not at all like they come from the factory. I have also used diamond whetstones and attempted hand sharpening and I have experience hand sharpening knives with whetstones. Due to the hardness of the blades, sharpening takes a long time. I can make a knife sharper with this method than with a Kyocera sharpener, but knives don't stay sharp for long. not so brittle and brittle.

Pros
  • Well built
Cons
  • Makes me nervous
