I always keep lemon peel in the freezer (orange too, but I don't use it often). This cester really outperforms my all-purpose grater, which is relatively difficult to clean. In the future, I will peel all my lemons before halving and juicing them. I place the shell on a 12" square sandwich sheet, fold over and put in a ziplock bag and freeze. MUCH better than bottled because it turns into a solid shell + water rock in the bottle and is difficult to remove.
