Review on Cangshan 1024197 German Forged 17 Piece by Ashley Carlson

I have had an expensive set of knives for about 7 years now. Unfortunately I probably lasted too long as several tips have chipped and broken off and regrinding has never brought the knives to superior sharpness. So I researched like crazy for about 2 months and finally pulled out. Trigger on the Cangshan Z series knife block with 6 steak knives. Right out of the box, the first impression is one of excellent quality. The weight and balance of the entire set instills an immediate sense of confidence! However, I really wanted to test the sharpness. Wow! I wasn't disappointed! I don't think I've ever held such a sharp knife in my hands. I took a loose sheet of paper and slowly cut it with razor sharp precision and a very smooth cut. (Obviously this set should be respected and cut into food, not fingers!) I'll be posting an update in a month or two to talk about the set's durability and ability to hold sharp edges. Until then, what a fantastic product!
