This item is razor sharp and the blade lasts a long time. Can be sharpened well when the time comes. everything you would expect from a Henckels blade. My only criticism is the handle. The edge of the shaft isn't quite flush with the grips on each side. If you run your hand over the top of the handle, you will feel the sharp edge. And it's a square edge, not rounded, so it looks sharp. It's not something that really comes into play when using a blade, it's just a matter of fit and finish. This is not a defect I would expect from a blade of this price and brand. Given all the 5 star reviews and the lack of other mentions of this issue, it seems likely I just got a slightly faulty knife. There are factory marriages. In general I am satisfied with the purchase, I will buy more. I use it for 90% of my kitchen work and find it a great all-round talent. Not too big, not too small. Fair price.
