Such cool hats! I have fermentation experience and have used airloc lids with a little plastic thing on top that you fill with water. In my opinion this is a much better design! What I like about them: 1. They keep the date you started fermentation. Hooray! No more mixing up enzymes and trying to rely on a calendar or writing on jars/lids.2. They take up very little storage space compared to other awkwardly shaped lids.3. No more cleaning hassle when your enzymes seep into all those little plastic parts from above. They'll just bubble up a little and you can just remove the lid, drain the excess brine from the top, rinse, and you're done. You can have peace of mind using only a small pump to reduce the risk of oxygen and mold. This is great for spirited shorter ferments like cucumbers and green beans that always look like mold! Easy to wash! A big piece and an o-ring and you're done. No more small lost parts. I ordered 6 sets to start because I'm making and selling sauerkraut for friends and family this season. I can't imagine dealing with so many enzymes in disguise that I've used in the past! No hassle with these amazing caps! :) Sally Lee
