This is the second set of these sheets that I have bought. I had had bad experiences with the first pans so I wanted to "start over" and see what I can do. I have experience with these pans turning brown. It's not a surface stain, it's built into the finish somehow. Needless to say, it doesn't come off. I checked the Wilton website and they recommended using foil or parchment paper to a few reviewers with the same issue. Well, then why a non-stick coating?! I used one as a lasagna baking sheet, covered it with foil and it STILL turned brown with no dripping. When placed hot from the oven on the cold top of the burner, a pan turned brown in the form of a convoluted top of the electric burner underneath. All of this makes me wonder if the non-stick surface on these pans is strong enough to be safe. I'm no chemist, but I've never had experience with nonstick cookware. The only thing I can think of is that it's some kind of coated steel with a non-stick coating that will eventually turn brown when exposed to heat. Personally, I like pans, especially cookie, bread, and cake pans, made out of shiny metal. I like the kind of baking that gives an aftertaste. These pots just don't work for me.
