Review on πŸ”ͺ Norton IM313 11.5 Sharpening System by Djuan Thompson

A sound investment in hand tools

Good you so, like me, we can argue about the price, but think of it as a lifetime investment, because that's what it is. This will be the last knife sharpener you will ever buy. Electric sharpeners will corrode knives and are not compatible with this product. I own a restaurant and there's nothing worse than working with a dull knife. It turns your task into a nightmare. So with all that said there is some learning curve but not much, just head over to YouTube to get the basics. After all, you can sharpen your knife by "feel" in no time at all. I can't tell you that with practice your knives will become hair sharp! One piece of advice: DO NOT use a course stone unless you have a very dull knife. A medium grit stone followed by a fine grit can spice up your knife. If you really want to take it to the next level, you can skin it after these two steps, but it's definitely not necessary. This product may be overkill for casual cooks, but for those who use knives every day, this is a solid investment and I cannot praise the craftsmanship enough.

Pros
  • 1/2 x 11-1/2 x 2-1/2 in. (H x W x D) Oilstone size allows use as a desktop knife and tool sharpener
Cons
