the thing works. It really works. My tofu has improved a lot since using this press. In fact, it works *so* well that I recommend using the tension cap gradually. It has two levels of intervention (like a radiator cap). If you turn it all the way from the start, you risk internal cracks in the tofu due to the pressure. I recommend only using the first stage for the first 15 minutes, allowing some water to drain, and then fully tightening the spring for another 15 minutes.
