Now my favorite thing to do is chop onions

I bought this knife after using a fake damask knife with an etched pattern and what the heck is the difference between day and night. First, the knife is lighter and much easier to handle compared to my other knives. I think it's a lighter wood. In terms of balance, I didn't notice any problems during the cutting movement. In addition, the knife has an excellent feel. The wood feels slightly soft. I'm not sure I can explain it in a review. I don't mind showing it off at dinner parties. After all, the knife out of the box becomes very sharp. I chopped up an onion to try it and it was the best feeling ever! Imagine - you don't cry when you use a sharp knife! Who knew! I sharpened it again on the 6000 whetstone and now it cuts almost everything like butter. Warning. If you're not used to handling sharp knives, I recommend watching a video on Gordon Ramsay's cutting technique. I've cut myself a few times and didn't even realize it until I was nauseous. This knife changed my life and has become my favorite knife in the kitchen. Highly recommended.
