Review on Dexter Russell S5197 Traditional Chinese by Kim Kawana

Damn. When I received it I was surprised at how light it was and a bit disappointed with the factory sharpening. I have run and hardened it over my rough and thin rock and am absolutely amazed at how sharp and nimble this knife is. I've been returning the thin steel blade after each use and wringing it out since I've had it and am amazed at how fun it is to use and how well the blade has held up. A few notes: It works amazing. suitable for softer vegetables, maybe better than any of my other knives. Due to its light weight, it is less impressive when confronted with heavier roots. If you're looking for a knife that does a few things surprisingly well but isn't needed for general purposes, I'd recommend this one. If you need a fun toy for your rack I would recommend this one. When you need a multitasking knife. this will work, but you can use a more traditional German, French, Gyuto, or Chinese cleaver.
