I usually use the cooler method, which is pretty much right, but easier. My old method was to freeze water in the fridge so that it freezes top to bottom. When I pulled out the block of ice, the top 2/3 was pure ice and the bottom 1/3 was cloudy. In about an hour of cutting and carving by hand, I would have ice cream like this, but with a lot more effort. These are my first two batches using only filtered water from my fridge and 20 hours in the freezer. Twenty hours seems ideal to me so the whole block doesn't freeze under the tray and is easier to remove. I like to cut off the bottom of the cube with a paring knife as this is usually a drainage circle sticking out from the bottom of the cube. You can see in the second image that one cube is cloudy. I assume this one was at the end and the ice on the side in front of the summit is frozen. But in any case a great result for a small price. Of course, this maker doesn't look as pretty as some of the others, but you can craft 10 cubes at a time instead of 2.
