After using various Microplane graters for a number of years, here's my verdict: Buy the narrow version instead of the Microplane 40020 Classic Zester/grater. The narrow version is just less flexible, meaning it takes less effort to get good shavings from hard foods (parmesan cheese, whole nutmeg) or pulp from softer foods like garlic or ginger. The wide spatula version requires more pressure to get the same results, which isn't great for my wrists and sometimes causes me to shave my fingers. To save on joints, I quit early, which means running out of food (garbage or extra work with a knife and cutting board). In years of use, I haven't found a single product that works better on a wide spatula than on a narrow grater. I thought I could solve the finger contact problem with the Microplane Microplane 34007 Kitchen Glove. Cut Resistant Glove and Grater Microplane 38057 Professional Series Grater . But I end up not using it much. The glove is good, but who wants to wash it all the time? and because of the kink mentioned, the grating head leaves a lot behind. After all, the wide spatula is only used when the narrow grater is in the wash.
