This is really a great set of cutters - small cookies, medium cookies, larger cookies, medium biscuits, large biscuits. They're sharp, be careful, but they do the job well. I had trouble at first getting the ring open. I had to get my stronger glasses but there definitely is a place on the smooth side opposite the screws that will come apart. You need to us a bit of force, but once you get it off, practice opening and closing it. To open: with the ring in front of you, use your right hand thumb and push away from you. With the left-hand fingers, pull the ring back toward you. Then push the right hand thumb away from you. On left side, use fingers to pull away from the right side. Once it's a little loose, push the right side open. After a number of practice runs, I decided to use an alternate ring. It's called ribbon. I'm using a pretty pink satin one.
