Considering the size of this tool, I expected it would come in handy when I needed some grated parmesan. Maybe for individual needs for a plate of pasta. I was wrong. I haven't used my grater since it came into my house. I'm amazed at how quickly you can whip up a full cup of grated parmesan with the perfect texture. The near-mirror finish makes cleaning surprisingly quick and easy, and I especially love the snap-on plastic guard that protects those incredibly sharp blades. In the case of Parmesan, the closer you get to the skin, the firmer the cheese becomes and the more concentrated the flavor becomes. receives. With other graters, I tend to save the hardest and toss them in my sauces. This new grater processes even the hardest cheese right next to the rind. Speaking of which, I urge you to be very careful with this tool. Over the years I've rubbed my fingers on any number of old box or hand graters with very little damage to my fingers. I'm pretty sure this tool will make a salad out of any finger that's offered to it. Be careful!
